Weet-Bix Balls

Ingredients:

  1. 7  Weet-Bix
  2. 220g (around 15 dates) medjool dates, pitted
  3. 2tbs honey
  4. 50g desiccated coconut
  5. 40g chia seeds
  6. 3tbs water (as required)
  7. 80g fruit and / or nuts of choice such as chopped apricots / almonds / pecans / raisins

Directions:

  1. In your food processor, place the weet-bix, dates, honey and coconut, and blend until combined
  2. Taking a small sample, place it on your bench and see if it rolls together easily.  If it’s too dry add a little water and mix again for a few seconds. Once satisfied with the consistency remove from the food processor and place into a ball to stir in the fruit and/ or nuts 
  3. Roll into firm teaspoon-sized balls and place into an airtight container in the fridge for up to 1 week
