Quinoa with prawns

Quinoa is such a superfood, it is great for protein and fibre, as well as vitamins B and E.

Ingredients:

500g green prawns

1 chilli

3 shallot 

1 garlic clove

100ml sauvignon blanc

1 lemon, zest and juice

For the quinoa:

olive oil

1 celery stalk

1 garlic clove

1 shallot

1.5 cups quinoa

1.5 cups vegetable stock

Method:

For quinoa pilaf, sauté the celery and shallots for about 2 minutes on medium heat.  Add quinoa and vegetable stock bring to a simmer, then reduce heat and cover.  Cook for 17 Minutes.

Meanwhile fry the prawns in the butter, add the chilli, shallots, garlic and stir until cooked, about 7 minutes. Add the wine, lemon zest and juice and allow the sauce to thicken. 

Place the quinoa in a bowl and top with the prawns. Bon appetit!
