Porridge and Fruit Compote

Porridge
Ingredients
- 150g rolled, organic oats
- 350mls milk - or water / or a mixture of both
Directions
- Pour the milk / milk mixture into a saucepan and add the oats on high, stirring until milk comes to the boil. Reduce to a simmer for an additional 4-5 minutes.
- To serve, pour into a bowl and add your choice of flavours such as;
- Banana
- Honey
- Maple syrup
- Slithered or flaked almonds
- Ground flax seeds
- Fruit compote / stewed fruits
- Fresh fruits
- Frozen fruits (thawed)
- Apples and sultanas
Fruit Compote
Ingredients
- 3 cups of chosen fruit (strawberries, applies, pears, rhubarb, plums - it’s endless)
- 1 tsp raw sugar
- ½ tsp of cinnamon
- 1 tsp vanilla extract
- 500ml water
Directions
- Place all ingredients in a saucepan and bring to the boil, reduce to a simmer and use a wooden spoon to muddle the fruit.
- Continue cooking over medium-low heat for 10-12 minutes, occasionally stirring.
- Remove from heat and transfer to a clean jar or container to cool thoroughly.
- Store in the fridge up to 1 week
Serve with oats, crepes, waffles, french toast, crumble and more.
