Porridge and Fruit Compote

Porridge

Ingredients

  1. 150g rolled, organic oats
  2. 350mls milk - or water / or a mixture of both

Directions

  1.  Pour the milk / milk mixture into a saucepan and add the oats on high, stirring until milk comes to the boil. Reduce to a simmer for an additional 4-5 minutes.
  2.  To serve, pour into a bowl and add your choice of flavours such as;
    1.  Banana
    2.  Honey
    3. Maple syrup
    4. Slithered or flaked almonds
    5. Ground flax seeds
    6. Fruit compote / stewed fruits
    7. Fresh fruits
    8. Frozen fruits (thawed)
    9. Apples and sultanas

 

Fruit Compote

Ingredients

  1. 3 cups of chosen fruit (strawberries, applies, pears, rhubarb, plums -  it’s endless)
  2. 1 tsp raw sugar
  3. ½ tsp of cinnamon
  4. 1 tsp vanilla extract
  5. 500ml water

Directions

  1.  Place all ingredients in a saucepan and bring to the boil, reduce to a simmer and use a wooden spoon to muddle the fruit.
  2.  Continue cooking over medium-low heat for 10-12 minutes, occasionally stirring.
  3.  Remove from heat and transfer to a clean jar or container to cool thoroughly.
  4.  Store in the fridge up to 1 week

Serve with oats, crepes, waffles, french toast, crumble and more.
