Plum Cake

Ingredients
- 6-8 plums
- ⅔ cup light brown sugar
- 180g butter at room temperature
- 3 eggs at room temperature
- 1 cup wholemeal flour
- ½ cup ground almonds (almond meal)
- 1 teaspoon baking powder
- ¾ cup milk
- 2 tbsp granulated sugar
Method:
- Preheat oven to 180C and line and grease a 20cm round cake tin.
- Cut the plums into slices, around 6 per plum, place to the side.
- Using an electric mixer, place butter and sugar and mix until pale and creamy, add the vanilla. Add eggs one at a time, beating well between each addition.
- Add the sifted flours and using a spatula, or large spoon gently mix together. Add your milk as required to moisten the mixture a little.
- Pour your batter into the prepared cake tin, and place your plums in a circular pattern around the cake tin. Sprinkle with the granulated sugar.
- Bake in the preheated oven for 1 hour and 15 minutes, or until the skewer comes out clean.
