Liv’s One pan chicken with couscous and herbs

Ingredients:

  1. 4 -5 boneless chicken thighs
  2. 1.5 cups of pearl couscous (dry)
    2 cups water or vegetable broth
  3. 3 carrots, peeled and grated
  4. 1/2 onion
  5. diced 2 cloves garlic, crushed
  6. Olive oil
  7. tsp paprika
  8. tsp garlic powder
  9. 1/4 tsp salt
  10. 1/4 tsp black pepper
  11. 1/2 tsp cumin
  12. 1/4 tsp turmeric
  13. 1/2 cup parsley, chopped
  14. 1/2cup dill, chopped 

Method:

  1. Marinate the chicken in about 1 tbsp of olive oil and season with the paprika, garlic powder and salt & pepper.
  2. Heat a large skillet on medium heat then drizzle in another 1-2 tbsp of olive oil. Sear the chicken on medium/high heat for about 2 minutes per side, until browned. Remove the chicken from the pan and set aside.
  3. To the same pan on medium heat, add in the diced onion and grated carrots. Cook together for 4-5 minutes.
  4. Add in the garlic, couscous and spices. Toss together for 1-2 minutes. Pour in two cups of water and mix together.
  5. Place the chicken back into the couscous and top with chopped parsley. Cover and cook on low for about 20-25 minutes.
