Liv's Immunity Salad

This recipe is a winter booster, full of goodness and is also delicious.

Ingredients:

Cauliflower

Broccoli

Chickpeas

Extra virgin olive oil

Kale

French lentils

Turmeric

Smoked paprika

Sea salt

Mixed seeds 

For the dressing:

1tbs tahini

1tsp miso pasta

Generous drop of apple cider vinegar

Instructions

  1. Coat the chickpeas in the olive oil and sea salt and roast for around 35 mins in 180 degrees C. Chop the cauliflower and broccoli into bite size pieces, coat in the olive oil, turmeric and paprika and roast for around 20 mins.
  2. Whilst your veggies are in the oven make you dressing, add your tahini, miso and ACV to a jar and shake until combined, set aside. 
  3. Add your French lentils to a large serving bowl, add your roasted veggies, kale and chickpeas. 
  4. Drizzle over the dressing and give everything a good mix until combined, finish with a sprinkle of mixed seeds for extra crunch and plant points! Enjoy
