Crispy Roasted Brussels Sprouts with Honey & Balsamic

Ingredients:

  • 500g Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey (or maple syrup for a vegan option)
  • Optional: toasted walnuts or parmesan for serving

Method:

  1. Preheat your oven to 200°C (fan-forced 180°C).
  2. Toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread them evenly on a baking tray, cut side down.
  4. Roast for 20–25 minutes, until golden and crispy on the edges.
  5. Drizzle with balsamic vinegar and honey, then toss gently.
  6. Return to the oven for another 5 minutes.
  7. Finish with walnuts or parmesan if desired, and serve warm.
