Crêpes: basic recipe for sweet or savoury crêpes

Ingredients
- 2 eggs
- 200ml milk
- 100g flour
- 2 tbsp melted butter
Method:
To make the batter, pour the flour into a large bowl and leave a well in the centre. In the well add your eggs and milk and while whisking constantly add your melted butter.
Place your batter in the refrigerator for one hour.
Heat your crêpe pan (or frying pan), grease with butter or oil and using a ladle pour the batter in so it is a thin layer across the pan (roughly an ice cream scoop is a good measure). When it starts to bubble (around 30 seconds) it’s time to flip.
Sweet: Serve with anything from fresh fruit, conserve, maple syrup, chocolate. Roll, or fold into a triangle
Savoury: fill with sauteed mushroom and cheese, you can add ham also. Fold and add some fresh herbs such as parsley to serve.
