Cottage Cheese Pancakes

This simple and nutritious, plus delicious recipe is great for the entire family.

Ingredients:

1 cup cottage cheese

3 tbs coconut flour (oat, wholemeal)

2 eggs

1.5 tsp baking powder

1 tsp vanilla extract

pinch of salt

Add all ingredients in a bowl and whisk until just combined. 

Heat your crepe pan (frying pan), and add butter or coconut oil while the mixture is setting.

Spoon in, using a table spoon, your batter and cook until firm on top, flip and cook a further 2 minutes, until pancake is cooke through.

Serve with fruit, yoghurt, maple syrup if you would like it sweeter, or even (nitrate free) bacon.
