These eggs combine the subtle sweetness of maple syrup, the nutty creaminess of toasted coconut butter, and the crunch of coconut flakes for texture, all wrapped in smooth, melted chocolate. The result is a treat that feels sophisticated but doesn’t require hours in the kitchen.
Ingredients
- ¼ cup coconut flour
- ½ cup toasted coconut butter
- 4 tbsp pure maple syrup
- ½ cup baking chocolate chips or chopped dark chocolate
- 1 tbsp unsweetened toasted coconut flakes (for garnish)
Method
- Prepare the base: Add coconut flour, toasted coconut butter, and maple syrup to a food processor and pulse until the mixture forms small crumbles.
- Shape the eggs: Line a plate or tray with baking paper. Using a tablespoon, scoop the mixture and press it firmly into an egg shape. Carefully slide each “egg” onto the lined tray. Freeze for at least 10 minutes to set.
- Melt the chocolate: In the meantime, melt the chocolate chips or chopped chocolate in 30-second intervals in the microwave, stirring well in between.
- Coat the eggs: Using a fork and spoon, dip each egg into the melted chocolate until fully coated. Let the excess drip off and return the chocolate-covered eggs to the tray. Sprinkle with toasted coconut flakes if desired.
- Set & store: Freeze for an additional 10 minutes before serving. Store any leftovers in an airtight container in the refrigerator until ready to enjoy.
