Cherry Ginger Iced Tea

'Tis the season! And this delicious drink, is Sweet, Spicy, and Refreshing!
Ingredients:
- 4 cups water
- 2 black tea bags
- 1 cup fresh cherries, pitted and halved (or 1/2 cup cherry juice)
- 1-2 tablespoons fresh ginger, peeled and sliced
- 2-3 tablespoons honey (optional, adjust to taste)
- Ice cubes
Method:
Bring 4 cups of water to a boil in a medium-sized pot. Once the water is boiling, remove it from the heat and add the black tea bags. Leave to steep for 5-7 minutes, then remove the tea bags and allow the tea to cool slightly.
While the tea is steeping, peel and slice the fresh ginger, and half the cherries, removing the stone.
In a separate small saucepan, combine the sliced ginger and fresh cherries with 1 cup of water. Bring to a gentle simmer and cook for about 5-10 minutes, allowing the flavours to infuse.
Strain the ginger and cherries, and combine the infused liquid with the brewed tea, pouring into a large pitcher. Stirring well to combine.
For a sweeter tea, add honey to taste while the mixture is still warm, stirring until fully dissolved.
Allow the tea to cool to room temperature, then refrigerate it until it is fully chilled.
Serve with glasses fresh with ice, lime, mint and some fresh cherries. Enjoy!
