Charles' Waffles

The Reymond weekends start with Crepes Saturdays and Waffle Sundays.  We have been doing this since Charles was one, and he now makes the waffles himself.

Here is our simple, sugar-free recipe. The sugar-free batter allows you to have more fun with your toppings, or enjoy a more wholesome breakfast!

Ingredients: 

2 eggs

30g butter, melted 

2 cups plain flour

1 tsp baking powder

1tsp vanilla extract

pinch of salt

Method:

Preheat the waffle iron. (If you can choose settings, I recommend a darker or higher heat setting for a crispier waffle.)

In a large mixing bowl, whisk together the flour, baking powder, and salt.

In a medium bowl, whisk together the milk, melted butter, eggs, and vanilla.  Ensuring to move fast, so the hot milk doesn't curdle the eggs.  Pour the milk mixture into the flour mixture and stir together just until combined.

Grease the hot waffle iron with butter, use a pastry brush and the remaining melted butter in the ramekin or pot you use to melt it.

Using a ladle, ladle around 1/3 cup of batter for each waffle to the hot waffle iron. (The amount will depend on the size of your waffle maker so feel free to experiment with how much you add.)

Toppings

We love coconut yoghurt and any fruit, mangoes, berries, bananas.

You can add eggs and bacon, avocado.

Maple syrup is a good treat too!
